Healthy Chewy No Bake Granola Bar Recipe


I don’t know about you, but sometimes I just want to bake but know there’s a high chance that I’ll devour everything the moment it’s out of the oven.  So recently I thought I would attempt something that felt a little healther so there would be less guilt when I shove it all in my face after making.  These healthy chewy granola bars are so incredibly easy, that they don’t even take any baking so are great for families to make together and can be used as energy bars for the gym bunnies… although I can’t confirm this seeing as I seem to pay for gym membership but not make it into the building at the moment.

The best thing about this granola bar recipe is that once the base mixture is made, they’re completely customisable.  I made two versions, one with chocolate drops and another with mixed seeds and you can switch up ingredients if there’s something listed here that you don’t like.  Brilliant or what?  It also uses coconut oil which is so good for you and anyone who has read my previous posts or knows me personally, will know that I love the benefits of coconut oil and use it for so many things.

This recipe makes around 16 good size granola bars or if you prefer, you can cut them smaller for little treats, and they taste great from the fridge or even straight from the freezer!

Ingredients:

265g / 1 cup Smooth Peanut Butter (or crunchy if you prefer)
6 1/2 tbsp / 1 cup Virgin Coconut Oil
6 1/2 tbsp / 1 cup Runny Honey
250g / 2 1/2 cups Rolled Oats
80g / 1 cup Desiccated (or shreadded) Coconut
70g / 1/2 cup Chopped Rasins
60g / 1/2 cup Chopped Pecan Nuts
50g / 1/4 cup Dark Chocolate Drops or Mixed Seeds

Method:

Line a large baking tray with greaseproof paper and set aside.  I used one 7×7 inch tray and one 8×8 inch tray so I could make bars with two different toppings.

Place the peanut butter, coconut oil and runny honey in a large saucepan and place over a meduim heat, mixing until all combined and smooth.

Remove from the heat and add the oats and desiccated coconut.  Mix by hand with a wooden spoon to combine all the ingredients.

Add the chopped rasins and pecan nuts and mix again until evenly combined.

Divide between two trays and smooth the top with the back of a spoon, making sure the mixture is evenly distributed and nicely in the corners of the tray.

Sprinkle the mixed nuts over one mixture and the chocolate drops on the other.  Be aware that the chocolate drops will melt on a warm mixture so you may prefer to add these once the mix has cooled a little.

Place in the fridge for at least an hour.

Cut into bars and wrap in greaseproof paper for a healthy snack on the go.

Remember, these homemade granola bars will always taste best straight from the fridge or freezer.  Once at room temperature, the coconut oil will warm up and won’t hold the mixture very well, so will become messy (but still delicious) to eat.
